Daniel and I love cheese. We like to buy lots of it. Unfortunately cheese doesn’t last forever, so this kept us from buying it in large quantities before. But one day we were at the store drooling over the cheese case, and a really helpful old lady sales clerk just happened to be close by watching us. She gave us the most helpful cheese advice we’ve ever gotten. Freeze it. … Freeze it! This doesn’t work well with the really dry cheeses of course. We do it with the blocks of mozzarella we buy, …because mozzarella is a wonderfully moist cheese. So when we buy a brick, I cut it into chunks, bag them separately, and stick them into the freezer until we’re ready to use them. Our freezer usually has cheese in it now. Sounds wonderful, right? Now I’m wondering what other cheeses would freeze well.
